This simple and savoury spinach quiche will melt in your mouth. It’s a great choice for a quick lunch, you can make them ahead of time and easily keep them fresh in the freezer. You can substitute any fresh or frozen vegetables if you like for the spinach.
INGREDIENTS
• 1 Pie shell
• 4 Eggs
• ½ cup 35% cream
• 2 cups Spinach
• ? cup Sundried tomato
• ½ cup Cheddar cheese
• Salt and pepper to taste
• In a bowl, combine the eggs, cream, vegetables and cheese
• Season with salt and pepper
• Pour into the pie shell
• Bake at 350ºF for 15 minutes
• Turn the heat down to 300ºF and bake until firm
