Simple and easy dip to enjoy as a side dish. The mango mixed in with the avocado and bell pepper is a perfect combination offering great flavor and nutritional value.
1 mango, peeled and sliced
1 red bell pepper, diced
1 onion, diced
2 Tbsp cilantro
2 Tbsp lime juice
Salt and pepper, to taste
Smash the avocado in a bowl.
Add onion, red pepper, and garlic.
Gently fold in mango, cilantro, and lime juice.
Refrigerate to allow flavors to marry (1 hour is sufficient).
Enjoy with cut up veggies.
