An easy to make salad filled with nutrients and loaded with flavor. Perfect to complete your meal, or as the main dish.
INGREDIENTS
- 4 large boiled potatoes
- 4 boiled zucchini
- 3 hard-boiled eggs
- 10 cherry tomatoes
- 1 sweet onion, finely chopped
- 6 radishes, finely chopped
- 1/2 cup parsley, finely chopped
- 2 celery sticks, finely chopped
- 1/2 cup dill, finely chopped
- 1/2 cup black olives
FOR THE DRESSING
- 1 cup EVOO
- 3 tbsp. vinegar
- Salt and pepper to taste
INSTRUCTIONS
STEP 1
Separately boil potatoes, eggs and zucchini and set aside to cool. Once cool cut into bite size pieces.
STEP 2
In a large bowl combine cherry tomatoes, onion, radishes, celery, parsley and dill. Mix in potatoes and zucchini and pour in the dressing. Refrigerate and before serving add in eggs and olives.
