Vegetarian Lentil Soup

This healthy lentil soup recipe comes together easily and quickly with pantry ingredients. Simple, healthy, vegan.

INGREDIENTS

  • 4 cups brown lentils
  • 4-5 bay leaves
  • 8-10 tomatoes, skinned and roughly chopped
  • 3 onions, finely chopped
  • 3 garlic cloves, finely chopped
  • 1 cup EVOO
  • 1/2 cup vinegar
  • 1 tbsp. oregano
  • Salt and pepper to taste

 

INSTRUCTIONS

STEP 1
Wash lentils and set aside. In a large saucepan, pour the oil and sauté onions for about 2 minutes. Add tomatoes, garlic, bay leaves, salt and pepper and bring to a boil. Add the lentils, cover the pan, lower head and simmer for 30 minutes.

STEP 2
Mix in vinegar and oregano to the lentils and let simmer for 10 more minutes. Serve immediately.
